The White Lion is a refined Gastro Pub & exemplary Hotel situated within the picturesque Cheshire countryside in the village of Weston. The property is grade II listed building and was originally built in 1652 as a farmhouse. It still retains its original charm and distinctive appearance, full of character adorned with part wooden panelled walls and bay windows.

Here you can experience great food & drink and we pride ourselves on exemplary service and outstanding events. Our beautiful 17th-century building contains a private function room that is the ideal intimate setting for any special event and can comfortably seat up to 40 guests and is licensed for Civil Ceremonies. We also have large garden with outdoor garden and bar perfect for those summer months with plans to build a permanent outdoor structure in the garden in spring 2022.

The Role

As the Hotel Food and Beverage Manager your role will encompass all elements of the F&B operation from the Restaurant and Bar through to Events & Functions, reporting directly to the owners. This is a hands-on role, and you will be responsible for structuring and executing the F&B strategy for the restaurant and bar, in line with the broader business objectives.

You will monitor all F&B stock levels including Restaurant and bar, working with team to supply the best dry & wet products for our customers. Our customer experience is key and our aim is to deliver to our customers have a simply perfect experience that is truly memorable!

Monitoring all F&B stocks and sale figures, using our innovative systems to compile weekly reports. You will swap and change what is working and what is not working, conducting a weekly audit on F&B, to ensure wastage is kept to a minimum and stocks are kept filled.

Duties include but will not be limited to: 

· Ordering all food and beverages, liaising with regular suppliers for routine orders, and specials.

· A hands-on role within the restaurant ensuring that all teams understand the products we are selling within all F&B Outlets.

· Working with the team leaders, to ensure F&B standards within the restaurant are delivered, and the teams have adequate, training, coaching and feedback to consistently deliver the results in line with the Hotel requirements.

· Ensure effective and efficient financial management, including optimum control of departmental budget, including cost control, correct and optimum staffing levels, considering seasonal requirements, e.g., Summer, Christmas/New Year, Easter etc., stock control and prevention of theft.

· Implement appropriate strategies for market trends, to improve sales.

· Proactively plan to ensure department preparedness based on restaurant occupancy levels

· Maintain effective and positive relationships with customers and staff to develop a positive management presence, encouraging discussion and feedback, which will benefit the business.

· Undertake Duty Management Shifts as required, this includes lock ups and cashing up.

About you:

· Strong Restaurant and Bar background from within hotel or restaurant sector.

· Previous F&B knowledge and experience

· Ale experience would be a huge advantage, along with cellar experience

· Proven record as a strong team leader

· Have a passion and strong knowledge for all things food and beverage

· Strong communication skills (verbal, listening, writing)

· Commercially driven and financially aware

· Highly organised
