The White Lion is a refined Gastro Pub & exemplary Hotel situated within picturesque Cheshire countryside in the semi-rural village of Weston. The property is grade II listed building and was originally built in 1652 as a farmhouse. It still retains its original charm and distinctive appearance, full of character adorned with part wooden panelled walls and bay windows. Here you can experience great food & drink, and we pride ourselves on exemplary service and outstanding events. With 17 bedrooms, a restaurant and a bar, indoor function space for 45 people and outdoor space for marquee's up to 200 people, we have all the hospitality that is needed in Cheshire.
We are looking for an experienced GM, we have a recently revamped menu offering classic British favourites cooked to a standard the lion is accustomed to, featuring some classic grills and fresh seafood, as well as small plates, all in all, a classic British countryside menu. With the availability to revamp the drinks menu, now is the perfect timing. Reporting directly to the director and owner of the business, we are looking for a business partner, that can take our beautiful venue to the next level.
Our ideal GM is someone to inspire the team, to be on the floor showing the way, teaching, inspiring and pushing the lion forward each day. You will drive the restaurant and bar performance each day, ensuring the standards are upheld, the team are progressing and most importantly, our guests experience is upheld.
Duties include but will not be limited to:
· Uphold and structure a sustainable financial structure, business currently operating at 2 million+ turnover
· Ensuring ordering of wet and dry, maintaining margins and stock levels are maintained
· Working with the kitchen to uphold maximum effectiveness, monitoring wastage, systems in place for peak times and kitchen rotas are upheld
· Management of footfall
· Ensure the events are booked, organised and ran correctly. With over 50 events in 2024 so far, events are a large revenue generator for the business, with creative freedom provided
· Ensuring the hotel is kept to targeted fill rate and maximising upselling of hotel guests
About you
We will make all resources available to you, administration can be taken care of, alongside payroll, your role is to then show us what you have got and make the lion the best venue it can be
You will have a keen eye for detail, alongside training your team, we work as a team, we succeed as a team, it's up to you to make that team possibleExperienced in running a similar type of revenue, with hotel, restaurant, bar and events, there is many income generators to manage and maximise on
